Texas Chili ~ Mrs. Bessie Timmons (Queen B)

The recipe in my mom’s handwriting.

Ingredients

  • 5 lbs medium ground beef
  • 3 cups grated onion

Seasoning mix

  • 3 tbsp salt
  • 5 tbsp chili powder
  • 4 tbsp paprika
  • 1 tbsp cumin
  • 1 tsp oregano

Other additions

  • 2 qts tomato juice
  • 2 to 4 dried red chiles

Instructions

  1. Spread the ground beef loosely across the bottom of a large skillet or pot. Cook on medium heat.
  2. Add the grated onion and stir as the meat cooks.
  3. Mix the seasonings in a small bowl.
  4. Sprinkle the seasoning mix over the simmering beef and onions. Let it cook for about 30 minutes.
  5. Pour in the tomato juice and cook for 10 minutes.
  6. Add the dried red chiles for heat.

Storage

  • Refrigerate at least 8 hours. Reheat and serve. Freezes well.
